I was craving chocolate cake and wanted the quickest thing possible. Going to the store was out of the question since my baby was already sleeping and I was not about to wake him up to cave in to my chocolate cake fix.

I started looking in my cabinets and found a can of Funfetti vanilla frosting, but no box of cake mix. So I decided to just whip up my own cake mix since I knew I had all of the ingredients in house.

the easiest recipe by far:

2 cups of all purpose flour
2 cups of sugar
2 eggs
1 cup of hot water
1 cup of almond milk
1/2 cup olive oil
3/4 cup of cocoa powder
2 tsp baking power
2 tsp vanilla
1 1/2 tsp baking soda
1 tsp salt

I threw all of those ingredients together at once in my Kitchen Aid mixer and let it mix for 1-2 minutes. I greased cake pan to get that ready while the batter was mixing. I poured the batter into the cake pan and then tossed it in a 350 degree preheated oven. Let it cook for about 30 minutes, and voilà!

The hard part for me has always been letting the cake cool before putting the frosting on. I decided to do a little cleaning and what not after I got my cake stand out. I thought the cake was cool-ish to the touch so I put the Funfetti frosting on top after I finished cleaning.

Quick and easy! I absolutely love, and prefer, homemade buttercream. The Funfetti vanilla frosting was all that I had in my pantry cabinets so that is what I had to work with. The cake came out great, and half of the cake was gone the next day between my husband and I.
