I ran a 5k event the day I made this bowl. Since I needed as much energy as possible, I threw this bowl together for breakfast so I got the fuel that I needed to maximize my run. It may look complicated but it really is an easy recipe to create. There is some prep work behind it, but believe me, it is well worth the wait!

Before you assemble the bowl there is some prep that needs to be done. First, you need to set your oven to 400 degrees. Dice a sweet potato and put it on a sheet pan along with chick peas and red onion while you wait for the oven to preheat. Coat it in olive oil with salt and pepper. Let that cook for 15-20 minutes. You can prep this the night before if you’d like to save time in the morning.

Now you can start to assemble your bowl. Put spinach or arugula in your bowl followed by the roasted sweet potato, onion, and chick pea mix. You can either fry or poach an egg or two and then place it on top. Lastly, sprinkle some fresh thyme and drizzle balsamic glaze on top.
